Apple Cranberry Muffins
1/2 cup butter or margarine
2/3 cup white sugar
2 eggs
2 cups flour
1 tsp baking powder
• 2 tsps baking soda
1/2 tsp salt
1/2 tsp nutmeg
1 1/4 cups fat free vanilla yogurt
1 tsp vanilla
2/3 cup dried cranberries
2 cups diced NS apples
Core and dice apples. Cream butter and sugar in a large bowl until light and fluffy. Beat in eggs. In a small bowl sift together flour, baking powder, baking soda, salt, and nutmeg. Combine yogurt and vanilla. Add wet and dry ingredients to butter mixture, half of each at a time alternating, stirring gently after each addition. Stir in apples and cranberries. Fill paper-lined muffin tins 2/3 full and bake at 350F for 20- 25 minutes, or until a toothpick inserted in the centre comes out clean. Makes 18 medium muffins.
