Apple Blueberry Muffins
Yield: 12 muffins

2 cups flour 500 mL
2 tsp. baking powder 10 mL
1/2 tsp. cinnamon 2 mL
1/2 tsp. baking powder 2 mL
1 cup sugar 250 mL
3/4 cup milk 175 mL
1/4 cup yogurt 50 mL
1 egg 1
1 tsp. vanilla 5 mL
1/4 cup vegetable oil 50 mL
medium Nova Scotia apple 1
1/2 cup wild blueberries 125 mL

Mix flour, baking powder, cinnamon, soda, and sugar in a medium size bowl.  In another bowl, stir milk, yogurt, beaten egg, vanilla and oil.  Grate apple, add blueberries, mix lightly with the dry ingredients.  Make a well in the flour mixture, add liquids and mix until just blended. Place in an oiled muffin tin ¾ full.  Bake in a 375 F (390 C) oven for 20-25 minutes.  Place on a rack to cool.

Bran Variation: reduce flour by ¼ cup (50 mL), add 1 cup (250 mL) bran and ¼ cup (50 mL) extra milk.
