Nova Scotia Apples - Recipe Box: Waldorf Supreme Salad

 

Waldorf Supreme Salad
Yield: 6-8 side salads

• 500 mL diced, unpeeled Nova Scotia apples 2 cups
• 250 mL thinly sliced celery 1 cup
• 125 mL chopped walnuts 1/2 cup
• 125 mL diced seedless raisins 1/2 cup
• 125 mL diced orange or pineapple 1/2 cup
• 25 mL chopped parsley or green onion 1 1/2 tbsp.
• 500 mL diced, cooked chicken, turkey or ham 2 cups
• 1 mL curry powder (optional) 1/4 tsp.
• 125 mL (approx.) mayonnaise or lemon dressing* 1/2 cup*

Lemon Dressing
(makes 500 mL or 2 cups)

• Blend well
• 250 mL reconstituted lemon juice 1 cup
• 250 mL vegetable oil 1 cup
• 15 mL salt 1 tbsp.
• 5 mL pepper 1 tsp.
• 125 mL sugar 1/2 cup
• 60 mL honey 4 tbsp.
